Rice with galley, monkfish and prawns
Then we delight you with the recipe for galley, monkfish and prawn rice that will be served during these Days of the Galera de Terres de l’Ebre at the Restaurant Les Veles in L’Ametlla de Mar.
Ingredients for 4 people:
Rice 400 grams.
1/2 red pepper.
1/2 green pepper.
1 onion
2 liters of fish smoke.
240 grams of clean monkfish tails.
12 prawns.
60 grams of olive oil.
salt to taste.
Elaboration:
Cut the onion, red pepper and green pepper into “brunoise”.
Mark in a pan with a little oil monkfish cut into cubes, whole prawns and whole galleys over high heat.
Withdraw and book.
Saute the vegetables over medium heat so that they caramelize a little with olive oil.
Once stir-fry we will add the rice and seal it over low heat along with the brand of vegetables.
We boil the fish fumet. When it has reached a boil, add it to the rice and cook it over high heat for 10 minutes.
Then we lower the heat over medium heat and finish cooking it for another 5 minutes.
We add salt to taste.
We add monkfish, prawns and galleys and finish cooking it in the oven at 220ºC for another 5 minutes.
We take the rice out of the oven and let it rest for about 3 or 4 minutes before serving.
